1/2 c sugar
1 1/2 t baking soda
2 eggs

1/4 c butter (melted and cooled)
2 t cinnamon

Preparation:

Step 1

Sift together flour, sugar, baking soda and cinnamon.

Step 2

In another bowl, blend eggs, yogurt and butter.

Step 3

Pour egg mixture into flour mixture, add apples and stir.

Step 4

Bake at 375°for 20-25 minutes.

Step 5

Yields 12 muffins.

GREAT recipe, although we thought it could use a little more cinnamon (simply personal preference). I did do a couple things different (though I don't think this changed the taste any, just maybe a little denser texture). I used approx. half whole wheat flour and the rest white, and coconut oil (melt and cool to almost room temp) in place of butter. Bring eggs and yogurt to about room temp. Apples were diced just to make sure they were cooked through. Also made a sugar-cinnamon topping, think it would be good with a cinnamon crunch topping too. Very good!
