If your weekday lunches need a makeover, this colorful tart makes a much more interesting partner for a cup of soup or salad. They're also the perfect appetizer—just cut into 2-inch squares and reheat. Too easy!

Ingredients

1 c shredded cheddar cheese
3/4 c Stonyfield Organic Plain Nonfat Yogurt
1/4 c grated Parmesan cheese
2 pk organic crescent rolls
2 T unsalted butter
6 leeks (white and light green parts only - halved lengthwise and thinly sliced crosswise, rinsed well)
1/2 t salt
1/4 t black pepper
1 sli Virginia Ham (1/4-inch-thick cubed)

Preparation:

Step 1

Heat oven to 350°. Stir together cheddar, yogurt and Parmesan; set aside.

Step 2

Unroll dough for each crescent roll onto a baking sheet; press together seams well and using fork, poke dough with holes. Bake for 14 minutes or until lightly browned. Remove from oven and set aside.

Step 3

Meanwhile, heat butter in a large skillet over medium-high heat. Add leeks, salt and pepper to pan and stir until well blended. Cover and cook for 15 minutes or until wilted. Remove cover and cook, stirring often, for another 5 minutes or until liquid has evaporated. Stir in ham and remove from heat; cool 10 minutes. Stir in yogurt mixture.

Step 4

Place leek mixture in the center of baked dough, spreading top smooth and leaving a 1/2-inch border around edges. Return baking sheet to oven and bake for 10 minutes or until warmed through. Cut tart into 48 squares and serve immediately.
