Ingredients

1 large cucumber (peeled and coarsely grated)
1 large garlic clove (pressed)
Sea salt and fresh ground black pepper to taste
Sprigs of mint leaves to garnish
1 1/2 T champagne vinegar
1 T fresh mint leaves (chopped)
1 c Stonyfield Organic Fat Free Plain Yogurt
1 c seltzer water or club soda

Preparation:

Step 1

Place in a bowl the grated cucumber with the rest of the ingredients.

Step 2

Garnish with mint leaves and serve.

Step 3

In case you are not serving this immediately, exclude the seltzer water and refrigerate the soup.

Step 4

Add the seltzer water to the soup mixture just before serving.
