Ingredients

Wasabi Cream

1/2 c Stonyfield Organic Greek Plain Nonfat Yogurt
1 1/4 t wasabi paste

Shrimp Cocktail

6 jumbo shrimp (peeled and cooked)
1 cucumber (thinly sliced, julienned)
2 sheet Nori
1 clv garlic (pressed)
1 t fresh lime juice
1 t roasted sesame seeds
2 T tamari soy sauce (serve on the side)

Preparation:

Wasabi Cream

Step 1

In a small bowl, mix the yogurt and wasabi paste until well blended.

Shrimp Cocktail

Step 1

Cool shrimp to room temperature and dry completely.

Step 2

With a small iron skillet, toast the sesame seeds and set aside.

Step 3

Using a peeler or mandoline, slice one cucumber avoiding the seeds, about 3- 4 thin slices.

Step 4

Stack and julienne creating 2 1/2 inches long cucumber straws.

Step 5

In a bowl, mix together Wasabi Cream, garlic, lime juice and season to taste with salt and pepper.

Step 6

Roll a nori sheet into a cone shape and start filling it with cucumber straws, 3 shrimps, wasabi yogurt cream sauce and sprinkle toasted sesame seeds on top.

Step 7

Repeat the same for each serving.

Step 8

Serve with a side of tamari soy sauce.
