These muffins are a great brunch item. For extra sweetness, dust with cinnamon sugar while still hot.

Ingredients

1 c all-purpose flour
1 c whole wheat flour
1/2 c sugar
1 1/2 t baking soda
2 eggs
1 c Stonyfield Low Fat Plain Yogurt
1/4 c butter (room temperature)
1 t vanilla
1 c chopped strawberries

Preparation:

Step 1

Preheat oven to 375°.

Step 2

Grease a 12 muffin tin or line it with paper baking cups.

Step 3

In a large bowl, sift together flour, sugar and baking soda.

Step 4

In another bowl, stir together eggs, yogurt, melted butter and vanilla until blended.

Step 5

Toss the strawberries with the flour mixture.

Step 6

Pour the egg mixture into the flour mixture and stir until the flour is just moistened. The batter will be lumpy.

Step 7

Spoon the batter into the muffin cups.

Step 8

Bake for 20 - 25 minutes, or until the tops are golden brown.

These muffins are almost like a cupcake. They were so moist and the flavors were just right! So yummy- I would definitely recommend making for a crowd or an any-morning breakfast, treat, or snack.
