Sweet Cherry Baked Oatmeal

This recipe was inspired by my father who eats oatmeal every single morning and never tires of it.  Nope- he’s a regular with the oats and this holiday season I’ll be visiting him at the beach … I’m going to surprise him by making this baked oat recipe; I know he'll enjoy it!

Ingredients

2 c Uncooked gluten-free oats
3/4 c almonds
2 T sugar
1 t baking powder
2 t ground cinnamon
1/2 t sea salt
1 3/4 c Stonyfield Organic Milk
1 large egg
3 T butter (melted)
2 t almond extract
1 c fresh cherries (pitted and sliced)
1/2 c fresh blueberries
1 c fresh strawberries (sliced)
2 T honey (for serving)

Preparation:

Step 1

Preheat oven to 375°. Prepare an 8-inch square baking dish with nonstick baking spray.

Step 2

Combine oats, almonds, sugar, baking powder, cinnamon, and sea salt in a bowl. In a separate bowl, whisk milk, egg, butter, and almond extract.

Step 3

Transfer oat mixture to prepared baking dish; layer the almond milk mixture on top of oats. Scatter cherries, blueberries and strawberries on top.

Step 4

Bake for 45 minutes or until golden brown and the oat mixture has set.

Step 5

Remove from oven; set aside to cool for 5 minutes before serving with honey.
