Grapefruit gives this protein-rich dish a fresh twist.

Ingredients

1 1/2 c Quinoa
1 T honey
1/3 c fresh cilantro (finely chopped)
1/3 c honey roasted peanuts
1/3 c Stonyfield Organic Plain Greek Yogurt
1 grapefruit (juiced)
2 T fresh grapefruit zest
2 chives (thinly sliced)
1/4 t sea salt
1/4 t Freshly ground black pepper

Preparation:

Step 1

Cook quinoa according to package directions. Remove from heat and immediately transfer to a large bowl. Add honey and gently toss to combine. Set aside covered for 10 minutes to soak.

Step 2

Mix in remaining ingredients.

Step 3

Serve.
